Vaporized coffee
DEFINITION: Vaporized coffee is coffee subject to flushing by steam for variable times and pressures for the purpose of removing certain defects in the product. This process is aimed at eliminating certain organoleptic defects (for example, wood taste) to ensure they are not too marked. The experience of the professionals at Demus and the small scale tests that can be carried out on pilot equipment will be able to test the impact of the process on the coffee in order to assess in advance the effectiveness of the process, to be then extended on an industrial scale for the whole batch.
